Miso – Like eggplants, this protein-rich paste made from fermented soybeans also has a very high nutritional content and high in antioxidant. It also helps improve digestion and strengthen our immune system, another option for healthy eating and weight loss.

Baked Baby Miso Eggplant

Shiro miso 20g

Aka miso 20g

Mirin 1 tbs

Sake 1 tbs

Sugar 1 tsp (optional)

Spring onion 1 stalk (sliced)

Daikon 50g

Sesame seed 1 tsp (toasted)

Olive oil 2 tbs

Mix the miso together in a bowl with mirin, sake and sugar

In a hot pan, drizzle some olive oil and pan fry the eggplant until golden brown

Spread the miso mixture on the eggplant evenly and preheat the oven at 170 degree

Bake the eggplant for 5 to 7 minutes until eggplant is soft to the middle. 

Remove from the oven and garnish the eggplant with spring onion and sesame seed. Serve hot.
